You Thought You Were Eating Healthy But You Didn’t Know This

We’ve all been taught since grade school that we should eat a balanced diet of vegetables, fruits, meats/proteins, grains, dairy, etc. to ensure good health. You can probably picture the food pyramid in your mind as you read this post. As we’ve gotten older, we have realized the importance of eating many healthy vegetables and fruits mixed with proteins and other foods to maintain nutritional requirements as well as our desired weight.

So if we are spending time, energy, effort and money to plan healthy menus, shop for healthy foods and prepare them in healthy ways…does that mean we are reaching our goal of “eating healthy?”
That may have been the case many years ago, but due to soil depletion, pesticides, chemicals, hormones, intensive agriculture and a variety of other reasons, crops grown decades ago were much richer in vitamins and minerals than the varieties most of us get today.

The Data Provides the Dirt on Dirt (Soil)

Dr. Joel Wallach, a biomedical pioneer who began his medical career specializing in the nutritional treatment of cystic fibrosis, and continues to be a strong health advocate, spent many years researching how nutrition affects health in animals and humans.

He shares points from his nutritional research to explain that before electric stoves, wood ash/plant minerals were emptied each day and used to fertilize our gardens (95% of wood ash is plant minerals), which provided a continuous rich, healthy soil in which to grow our foods. Farm waste was used as fertilizer, and if pesticides were used, they were made of herbs, coal tar, or inorganic compounds. This ensured that our vegetables and fruits provided healthy amounts of proteins, calcium, phosphorus, iron, and vitamins and other minerals.

Not so today. A landmark study on the topic by Austin Texas’ Department of Chemistry and Biochemistry was published in December 2004 in the Journal of the American College of Nutrition. They studied U.S. Department of Agriculture nutritional data from both 1950 and 1999 for 43 different vegetables and fruits, finding “reliable declines” in the amount of protein, calcium, phosphorus, iron, riboflavin (vitamin B2) and vitamin C over the past half century. Researchers chalk up this declining nutritional content to agricultural practices designed to improve traits (size, growth rate, pest resistance) other than nutrition.

The Organic Consumers Association cites several other studies with similar findings: A Kushi Institute analysis of nutrient data from 1975 to 1997 found that average calcium levels in 12 fresh vegetables dropped 27 percent; iron levels dropped 37 percent; vitamin A levels dropped 21 percent, and vitamin C levels dropped 30 percent.

So this means that even if we’re eating fresh fruits and vegetables, grains and proteins, we are still not giving our bodies the full balance of vitamins and minerals they need to be healthy.

This lack of nutrition in our foods can take a toll on our health. A study published in Mineral Sources International found that recent dietary, environmental and disease trends could be attributed to depleted soil as a result of pesticides, hormones, heavy metals, antibiotics and food additives, trace mineral depletion of the soil, excessive use of fertilizers, changes in crop varieties, loss of micro flora/fauna within the soil, etc.
